- Mix Cornstarch and Water: In a small bowl, dissolve the cornstarch completely into the water by mixing thoroughly. Set this mixture aside for now.
- Heat Coconut Milk and Sugar: Pour the entire can of coconut milk into a small saucepan over medium heat. Add the sugar and whisk the mixture continuously until it is just about to boil.
- Add Cornstarch Mixture: Slowly pour the cornstarch and water mixture into the saucepan while whisking continuously to avoid lumps.
- Cook Until Thickened: Reduce the heat to low and continue cooking for 10 to 15 minutes, whisking frequently. The haupia will thicken significantly and become almost gluey, pulling away from the sides of the pan when it is ready.
- Chill to Set: Pour the thickened mixture into a greased or parchment paper-lined 8×8 inch pan. Let it cool at room temperature for 15 minutes, then refrigerate for 1 to 2 hours until fully set. Once chilled, cut into squares and serve.
