Instructions
- Preheat Oven: Position oven rack to the middle and pre-heat to 350°F.
- Prepare Muffin Pan: Line a 12-cup muffin pan with paper or silicone liners. Set aside.
- Prepare Dry Ingredients: In a large bowl, combine flour, oats, baking powder, baking soda, cinnamon, and salt. Whisk and set aside.
- Prepare Wet Ingredients: In another bowl, whisk together melted butter and brown sugar until smooth. Add eggs, vanilla extract, and milk; whisk until combined.
- Combine Ingredients: Add dry ingredients and chopped apples to the wet ingredients. Mix until just combined; do not over-mix.
- Fill Muffin Liners: Scoop batter into muffin liners evenly.
- Bake: Bake for 18-25 minutes at 350°F until set. Avoid over-baking to prevent drying out.
- Cool and Serve: Let muffins cool in the pan for 15 minutes before transferring to a wire rack. Cool to room temperature before serving.
