Ingredients

Scale

Dry Ingredients:

  • 1 1/2 cup whole wheat flour
  • 3/4 cup quick oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt

Wet Ingredients:

  • 6 Tbsp unsalted butter (melted)
  • 1/2 cup brown sugar (packed)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup finely chopped apple (about one small apple with skin on)

Instructions

  1. Preheat Oven: Position oven rack to the middle and pre-heat to 350°F.
  2. Prepare Muffin Pan: Line a 12-cup muffin pan with paper or silicone liners. Set aside.
  3. Prepare Dry Ingredients: In a large bowl, combine flour, oats, baking powder, baking soda, cinnamon, and salt. Whisk and set aside.
  4. Prepare Wet Ingredients: In another bowl, whisk together melted butter and brown sugar until smooth. Add eggs, vanilla extract, and milk; whisk until combined.
  5. Combine Ingredients: Add dry ingredients and chopped apples to the wet ingredients. Mix until just combined; do not over-mix.
  6. Fill Muffin Liners: Scoop batter into muffin liners evenly.
  7. Bake: Bake for 18-25 minutes at 350°F until set. Avoid over-baking to prevent drying out.
  8. Cool and Serve: Let muffins cool in the pan for 15 minutes before transferring to a wire rack. Cool to room temperature before serving.

Notes
