Wet Ingredients:
- 3 overripe bananas
- 1 large egg
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ⅔ cup nonfat Greek yogurt
Dry Ingredients:
- 1 cup oats (blended into flour)
- ½ cup vanilla protein powder
- 2 teaspoons baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup chocolate chips
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
- Mash & Mix: Mash bananas in a large bowl until smooth. Stir in egg, maple syrup, vanilla extract, and Greek yogurt.
- Blend the Oats: Blend oats into a fine flour.
- Combine Dry Ingredients: In a separate bowl, mix oat flour, protein powder, baking powder, cinnamon, and salt.
- Fold it Together: Gently fold dry ingredients into wet ingredients. Stir until just combined. Fold in chocolate chips.
- Fill & Bake: Divide batter evenly between 12 muffin liners. Bake for 25–30 minutes or until a toothpick comes out clean.
- Cool Down: Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

- You can use any flavor of protein powder you prefer.
