Instructions
- Make the broth: Place the turkey carcass and chicken broth in a large Dutch oven. Bring the mixture to a boil over medium-high heat, then reduce the heat to low to maintain a gentle simmer. Cover the pot and cook for 30 minutes to extract rich flavors from the carcass.
- Prepare soup ingredients: After simmering, carefully remove the turkey bones from the pot and discard them. Add the egg noodles, chopped yellow onion, sliced celery, sliced carrots, bay leaf, kosher salt, black pepper, rosemary, thyme, and chopped turkey meat into the broth.
- Cook noodles and vegetables: Bring the soup back to a simmer. Cover the pot and cook for an additional 12 minutes, or until the egg noodles are tender and the vegetables are cooked through.

- Use leftover cooked turkey meat for best flavor and texture in the soup.
