Tomato Sauce:

  • 8 cups fresh plum (Roma) tomato purée (approx. 4.5 pounds)
  • 2/3 cup finely chopped onion
  • 2/3 cup finely chopped celery
  • 1/2 cup finely chopped carrot
  • 2 cloves garlic, finely minced
  • 4 Tablespoons bottled lemon juice
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried red chili pepper flakes

Instructions

  1. Prepare Canning Equipment: Set up water bath canner, jars, and lids following manufacturer and USDA guidelines.
  2. Cook Vegetables: In a large stainless steel saucepan, combine onion, celery, carrot, and garlic with 1 cup of tomato purée. Cook until boiling, then simmer for 5 minutes until vegetables are tender. Add remaining tomato purée gradually.
  3. Season and Boil: Stir in lemon juice, salt, black pepper, and chili flakes. Bring sauce to a boil and continue boiling for about 15 minutes until reduced by one-third.
  4. Canning: Fill hot jars with sauce, leaving headspace, remove air bubbles, seal jars, and process in boiling water for 35 minutes. Cool jars, check seals, and store as per USDA guidelines.
