4 onions

Garlic:

Fresh Basil:

3-4 handfuls

Oregano (dried, optional)


Instructions

  1. Cooking the Tomatoes: Check and clean tomatoes, boil for 3 minutes, peel off skin, and remove cores.
  2. Prepare Flavor Base: Blend onions, garlic, basil, salt, and optional herbs into a paste.
  3. Sauté Flavor Base: Cook the onion/garlic/basil mixture in olive oil until fragrant.
  4. Blend Tomatoes: Process tomatoes until smooth and add to the pot.
  5. Simmer the Sauce: Bring to a boil, then simmer with tomato puree until thickened to your preference.
  6. Let it Rest: Simmer for 30 minutes to 2 hours, stirring occasionally.
  7. Blend for Smoothness: Use an immersion blender for a smoother consistency.
