This Jalapeno Popper Cucumber Salad is a refreshing twist on a classic salad, combining the flavors of a jalapeno popper with crisp cucumbers. Creamy and zesty, it’s perfect for a light meal or a flavorful side dish.

Cucumber Salad:

  • 2 Persian cucumbers
  • ½ red onion
  • 1 jalapeno

Creamy Dressing:

  • 34 tbsp cream cheese (preferably with herbs)
  • 1 tbsp Greek yogurt (or sour cream)
  • ½ tsp garlic powder
  • ⅓ tsp smoked paprika
  • ¼ tsp coarse sea salt
  • 34 tbsp sharp cheddar cheese
  • ¼ tsp soy sauce (regular or light (optional))
  • Sesame seeds (black & white (for garnish))

Instructions

  1. Slice the Cucumbers: Slice the cucumber without peeling it with a mandolin or by a sharp knife on a cutting board into ½ cm (¼”) thick slices.
  2. Prepare the Salad: Add the sliced cucumbers to a mixing bowl or a jar. Dice the red onions and jalapenos and add them on top of the cucumbers.
  3. Make the Dressing: Add the cream cheese, Greek yogurt, garlic powder, smoked paprika, flaky sea salt, cheddar cheese, and soy sauce. Toss everything well to coat.
  4. Combine and Serve: Transfer the salad onto a serving plate and sprinkle with sesame seeds. Enjoy chilled!
