Jello Mixes

  • 3 oz strawberry Jell-O
  • 3 oz berry blue Jell-O

Other Ingredients

  • 1 cup boiling water
  • 3 cups mini marshmallows (divided as 1.5 cups per Jello flavor)
  • Vegetable oil or cooking spray (for greasing pans)

Instructions

  1. Prepare Pans: Grease two 8×8-inch pans with vegetable oil or cooking spray to prevent sticking. You will use one pan for each flavor of Jello.
  2. Dissolve Jell-O: In a medium bowl, add 1/2 cup boiling water and 3 ounces of one Jell-O flavor. Whisk thoroughly until all sugar granules are fully dissolved. If needed, microwave for an additional minute to keep the mixture warm to help dissolve the sugar.
  3. Add Marshmallows: Stir in 1-1/2 cups mini marshmallows into the warm Jell-O mixture. Microwave for 30 seconds to help the marshmallows melt, then whisk until the mixture is smooth and marshmallows are completely dissolved.
  4. Set the First Layer: Pour the mixture evenly into one of the prepared 8×8 pans. Place the pan in the refrigerator uncovered and chill for at least 1 hour, or until fully set.
  5. Repeat for Second Flavor: Repeat steps 2-4 with the second Jell-O flavor and marshmallows in the second prepared pan, chilling again for at least 1 hour.
  6. Remove and Roll: Once both Jell-O layers are firmly set, use a butter knife to gently loosen the edges and remove each Jello sheet from their pans in one full piece.
  7. Shape Roll Ups: Carefully roll each Jello sheet tightly on itself using parchment paper to help manage the shape. Let the rolls sit for about 30 minutes to allow them to stick together gently.
  8. Slice and Serve: Remove the parchment paper and cut the rolls into 1-inch strips. Serve immediately or store chilled for later enjoyment.
