- 2 cups lemon curd (store bought is okay)
Lemon Buttercream:
- 2 sticks unsalted butter, softened
- 6 cups powdered sugar
- 1 Lemon, zested
- 3–4 tablespoons milk
- 3–4 tablespoons lemon juice
- 2 teaspoons vanilla extract
- ½ teaspoon salt
Instructions
- For Cake Layers: Preheat oven to 350°F. Prepare cake pans. Whisk together wet ingredients. Toss blueberries with flour. Mix dry ingredients. Combine wet and dry ingredients. Fold in blueberries and zest. Bake and cool cakes.
- For Buttercream: Beat butter until fluffy. Add vanilla, salt, lemon zest, lemon juice, and powdered sugar. Beat until fluffy. Adjust consistency with milk. Frost and decorate the cake.
