Green Beans:
- 1 pound (450g) green beans, trimmed
Other:
- 3 tablespoons butter, divided (or ghee for paleo diet)
- 4 garlic cloves, minced
- Juice of 1/2 lemon + lemon slices for garnish
- 1/2 cup (125ml) chicken stock
- 1 tablespoon hot sauce (like Sriracha)
- 1/4 teaspoon crushed red chili pepper flakes, optional
- 1/2 cup fresh chopped parsley
Instructions
- Prepare Chicken: Pat the chicken thighs dry with a paper towel.
- Season Chicken: Combine onion powder, paprika, salt, and pepper. Rub over the chicken thighs.
- Pre-cook Green Beans: Microwave green beans with water until almost done.
- Cook Chicken: Brown chicken in butter in a skillet until cooked through.
- Sauté Green Beans and Sauce: Cook green beans with garlic, parsley, hot sauce, and lemon juice.
- Reduce Sauce: Add chicken stock, reduce until slightly thickened.
- Combine and Serve: Reheat chicken in sauce, adjust seasoning, and serve warm.
