Creamy Base:
- 4 oz cream cheese (or coconut butter)
- 2 tbsp butter (or additional coconut butter)
- 3 tbsp powdered sugar (or erythritol)
- zest of one lemon
Optional Ingredients:
- 3 oz white chocolate chips
- 1 drop natural food coloring (or pinch turmeric for color)
Instructions
- Prepare the Base: Bring the cream cheese and butter to room temperature. Blend all ingredients (except optional white chocolate) until smooth. You can use a hand mixer for best results or stir with a fork. Spread the mixture into a container or freeze briefly until firm enough to scoop.
- Form Truffles: Scoop small balls of the mixture onto a parchment-lined plate. Freeze until firm. For bars, freeze in a container and then cut into desired shapes.
- Optional Coating: If desired, dip the truffles in melted white chocolate or coconut butter. For a smoother coating, add a little oil to the melted chocolate. Cut each truffle in half after the coating sets for a professional look.
- Serve: Refrigerate or freeze any leftovers for later enjoyment.
