  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ tsp nutmeg (optional)
  • Salt and black pepper, to taste

Vegetables

  • 2 cups fresh spinach leaves

Instructions

  1. Cook the Pasta: Boil the pasta in salted water according to package instructions until al dente. Drain well and set aside.
  2. Cook the Lobster: In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the chopped lobster meat, season with salt and pepper, and sauté for 2-3 minutes until warmed through. Remove the lobster from the skillet and set aside.
  3. Make the Alfredo Sauce: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Pour in the heavy cream and bring it to a gentle simmer, stirring occasionally.
  4. Add Cheese and Seasonings: Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Season with salt, black pepper, and a pinch of nutmeg if using.
  5. Add Spinach and Lobster: Stir in the fresh spinach and cooked lobster, allowing the spinach to wilt slightly in the sauce.
