For the Steak:

  • 1 ½ pounds of sirloin (chopped into cubes)
  • 1 tablespoon EACH of chili powder and ancho chili powder
  • 1 teaspoon EACH of garlic powder, ground cumin, brown sugar, and onion powder
  • ½ teaspoon EACH of dried oregano, ground coriander, and smoked paprika
  • ½ teaspoon of cayenne pepper (optional)
  • 2 tablespoons of vegetable oil
  • Salt and ground black pepper (to taste)

For Serving:

  • 8 corn tortillas
  • 1 tub of sour cream
  • 1 pack of cotija cheese
  • 1 jar of store-bought guacamole
  • 1 jar of store-bought salsa
  • 1 jar of pickled red onions
  • Chopped cilantro (for garnish)
  • Hot sauce of your choice (optional)

Instructions

  1. Prepare the Steak: Pat the sirloin steak dry and chop into bite-sized cubes.
  2. Make the Spice Rub: Mix chili powders, garlic powder, cumin, brown sugar, onion powder, oregano, coriander, paprika, cayenne, salt, and pepper.
  3. Season the Steak: Toss steak cubes with vegetable oil and spice rub.
  4. Marinate: Let the steak sit for 5-10 minutes.
  5. Heat Skillet: Warm vegetable oil in a cast iron skillet.
  6. Sear the Steak: Cook steak for 1-2 minutes per side until browned.
  7. Finish Cooking: Continue cooking for 3-5 minutes until done.
  8. Assemble Tacos: Pile steak onto tortillas and top with desired toppings.
  9. Garnish and Serve: Garnish with cilantro and serve with hot sauce if desired.
