No-Bake Pecan Pie Bites Recipe

  • Author: lina
  • Total Time: 30 minutes
  • Yield: 12-15 bites 1x
  • Diet: Gluten Free

Description

These No-Bake Pecan Pie Bites are a delicious and easy-to-make snack that combines the rich flavors of pecans, dates, and chocolate. Perfect for satisfying your sweet tooth without turning on the oven, they offer a healthy twist on traditional pecan pie flavors in a convenient, bite-sized treat.

Ingredients

Scale

Base Mixture

  • 1 cup pecans
  • 1 cup pitted dates (soaked)
  • 2 tbsp coconut sugar or monk fruit sweetener
  • Pinch of sea salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)

Coating

  • 1 1/4 cup chocolate chips

Instructions

  1. Prepare the Dough: Add the pecans, soaked dates, coconut sugar or monk fruit, sea salt, vanilla extract, and cinnamon (if using) into a food processor. Blend until a sticky dough forms, scraping down the sides occasionally to ensure everything is incorporated evenly. This process may take a few minutes.
  2. Form the Bites: Roll the sticky mixture into small ball shapes and place them on a lined cookie sheet. Flatten each ball slightly with your palm to form discs. Put the cookie sheet into the freezer for about 15 minutes to allow the bites to firm up.
  3. Melt the Chocolate: While the bites are firming up, melt the chocolate chips in a microwave-safe bowl or over a double boiler until smooth and creamy, stirring frequently to prevent burning.
  4. Coat and Garnish: Dip each chilled pecan dough bite into the melted chocolate, coating it completely. Set each coated bite back onto the lined cookie sheet and place a pecan on top as garnish.
  5. Freeze to Harden: Return the cookie sheet to the freezer and let the chocolate harden completely before serving. This should take about 15 to 20 minutes.

Notes

  • Soak dates in warm water for 10 minutes if they are dry for easier blending.
  • Store the finished bites in an airtight container in the refrigerator or freezer to keep them firm.
  • For a nut-free version, substitute pecans with seeds such as sunflower or pumpkin seeds, but note the flavor will change.
  • You can use dark, milk, or white chocolate chips based on your preference.
  • Let the bites sit out for a few minutes before eating if removed from the freezer, so they soften slightly.
