Instructions
- Cook the meats and onion: In a large pot over medium-high heat, add the ground beef, ground Italian sausage, and chopped onion. Cook until the meats are completely browned and the onion is softened, about 7-10 minutes. Drain any excess fat from the pot.
- Sauté the garlic: Return the pot to the stove and add the minced garlic. Sauté for about 30 seconds, stirring constantly until fragrant to avoid burning.
- Add the liquids and seasonings: Pour in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, dried basil, dried oregano, and add the bay leaf. Season with salt and pepper to taste. Stir everything together to combine.
- Boil the soup: Cover the pot with a lid and bring the soup to a boil over medium-high heat.
- Add the noodles: Break the lasagna noodles into smaller pieces (about 2-inch lengths) and carefully add them to the boiling soup.
- Simmer until noodles are tender: Reduce the heat to medium-low, cover, and let the soup simmer until the noodles are cooked through and softened, about 12-15 minutes. Stir occasionally to prevent sticking.
- Serve and garnish: Remove the bay leaf. Ladle the soup into bowls and top with your choice of parmesan, mozzarella, or ricotta cheese. Serve hot.
