  • 2 large eggs, lightly beaten

Instructions

  1. Cook the Steak: Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Once hot, add the thinly sliced flank steak, season with salt and pepper, and cook for 3-4 minutes until browned and cooked through. Remove the beef and set aside.
  2. Sauté Onion and Garlic: In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Scramble the Eggs: Push the onions and garlic to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked, then combine with the onion and garlic mixture.
  4. Add Rice and Vegetables: Add the cooked rice, breaking up any clumps. Stir in the frozen peas and carrots, soy sauce, and sesame oil. Cook for 3-4 minutes, stirring frequently to heat through and blend flavors.
  5. Combine Beef and Season: Return the cooked beef to the skillet, mix everything well, and adjust seasoning with extra soy sauce, salt, or pepper as needed.
  6. Garnish and Serve: Remove from heat and garnish with sliced green onions before serving warm.
