For the Salmon:

For the Orange Sauce:
- 3/4 cup fresh orange juice
- 2–3 tablespoons honey
- 1 tablespoon rice vinegar
- 3 tablespoons low sodium soy sauce or tamari
- 1–2 tablespoons orange zest
- 1 tablespoon cornstarch
- 1/2 teaspoon red pepper flakes
For Serving:
- 2 cups cooked white or brown rice
- 2 cups cooked broccoli
Instructions
- Whisk sauce: Whisk together all sauce ingredients except cornstarch in a medium bowl.
- Marinate salmon: Add salmon cubes to the sauce and marinate for 15 minutes.
- Sauté: In a pan, sauté minced garlic, grated ginger, and oil over medium/low heat for about 2 minutes.
- Cook salmon: Cook marinated salmon cubes on each side for 3-4 minutes until golden brown and crispy.
- Thicken sauce: In a small saucepan, simmer the remaining sauce and cornstarch mixture until thick.
- Add sauce to salmon: Combine most of the sauce with the cooked salmon and simmer briefly to meld flavors.
- Broil: Optionally broil the salmon for 2-3 minutes for extra crispiness.
- Serve: Serve over rice and broccoli, drizzle with the remaining sauce, and enjoy!
