Ingredients
Scale
Brie and Coating
- 1 wheel Brie cheese (8 oz / 225 g), cut into 1-inch cubes
- ½ cup crushed pistachios (60 g)
- 1 tbsp olive oil (15 ml)
- 12–16 mini phyllo cups or sturdy crackers
Raspberry Honey Glaze
- ¼ cup raspberry preserves (80 g)
- 1 tbsp honey (15 ml)
- 1 tsp lemon juice (5 ml)
Optional Garnish
- Extra crushed pistachios
- Fresh thyme or rosemary
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Prepare Brie Cubes: In a mixing bowl, gently toss the 1-inch Brie cubes with 1 tablespoon of olive oil to help the crushed pistachios adhere nicely, then coat each cube thoroughly in the crushed pistachios, ensuring even coverage.
- Make Raspberry Honey Glaze: In a small saucepan over low heat, combine ¼ cup raspberry preserves, 1 tablespoon honey, and 1 teaspoon lemon juice. Warm gently while stirring occasionally until the glaze becomes smooth and pourable. Keep warm for drizzling.
- Assemble Brie Bites: Place the pistachio-coated Brie cubes into the mini phyllo cups or on your choice of sturdy crackers arranged on the prepared baking sheet.
- Bake the Brie Bites: Bake in the preheated oven for 8 to 10 minutes, until the Brie is softened and just beginning to melt but still holding its shape.
- Finish and Serve: Remove from the oven and allow the Brie bites to cool slightly for about one minute. Drizzle each bite generously with the warm raspberry honey glaze. Optionally, garnish with extra crushed pistachios and fresh thyme or rosemary for added texture and aroma.
Notes
- Use mini phyllo cups for a delicate, crispy base or sturdy crackers if phyllo cups are unavailable.
- Ensure the Brie cubes are evenly coated with olive oil and pistachios to get a crunchy crust.
- The glaze can be made ahead and kept warm on low heat or reheated gently before serving.
- Serve immediately after glazing for the best taste and texture.
- Fresh herbs add a subtle aromatic touch and can be omitted if not available.
