A delicious and easy-to-make Ramen Noodle Stir Fry that’s packed with flavor and wholesome ingredients. This recipe is perfect for a quick weeknight dinner or meal prep.

Main Sauce:
- 1/3 cup creamy peanut butter
- 1/2 cup chicken broth
- 2 Tablespoons soy sauce
- 1 tablespoon sugar
- 1 teaspoon hot sauce
- 2 cloves garlic (minced)
Stir Fry:
- 2–3 Tablespoons peanut oil
- 1 lb. boneless chicken breast
- Salt/Pepper (to taste)
- 2 cups broccoli florets
- 1 cup baby carrots (julienned)
- ½ small yellow onion (sliced)
- 1 stick celery
- 1 sliced bell pepper (red/green or both)
- 3 oz. Ramen Noodles (1 package)
- Green Onions, for garnish
- Roughly chopped peanuts, for garnish
Instructions
- Make the Sauce: Add the peanut sauce ingredients to a medium bowl and stir until combined. Transfer 1/3 cup of the sauce to a quart freezer bag and set the rest aside.
- Marinate the Chicken: Cut chicken into pieces, season, and coat with peanut sauce. Set aside.
- Cook the Chicken: Cook chicken in peanut oil until done, about 7 minutes.
- Boil Water for the Ramen: Boil water for ramen noodles and cook for 1 ½ – 2 minutes. Drain well.
- Make the Stir Fry: Cook vegetables, add chicken, then add ramen noodles and sauce. Toss to combine.
- Add the Ramen and Sauce: Reduce heat, add ramen and remaining sauce. Toss to coat. Garnish and serve.
Notes
- You can customize this stir fry with your favorite vegetables or protein.
- Adjust the hot sauce quantity to suit your spice preference.
- For a vegetarian version, substitute tofu for chicken.
