Ingredients
Scale
Red Velvet Cake
- 1 box red velvet cake mix
- Ingredients as per cake mix packaging (usually eggs, oil, water)
Cheesecake Mixture
- 16 ounces cream cheese, room temperature
- 4 tablespoons butter, room temperature
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups graham crackers, crushed
Instructions
- Preheat oven and prepare pans: Preheat the oven to 350°F (175°C) and line or grease 2 8-inch cake pans to prepare for baking the cake.
- Bake the red velvet cake: Prepare the red velvet cake mix according to the package instructions. Bake the cakes, then allow them to cool completely at room temperature.
- Prepare cake crumbs: Once the cake is completely cooled, crumble it by hand until it resembles coarse sand. If the crumbs feel too moist, break the cake into small chunks, spread them on a lined baking sheet, and dry them in the oven at 350°F for 5 to 6 minutes to remove excess moisture.
- Make the cheesecake mixture: In a large mixing bowl, combine the cream cheese, softened butter, and powdered sugar. Using an electric mixer, beat the ingredients together until the mixture is fluffy and aerated.
- Add graham crackers and vanilla: Place the graham crackers in a ziplock bag and crush them finely with a rolling pin. Add the crushed graham crackers and vanilla extract into the cream cheese mixture and mix until well combined.
- Form cheesecake balls: Using a 2 teaspoon cookie scoop, portion out the cream cheese mixture. Roll each scoop between your hands to form smooth, round balls. Place the balls on a lined baking sheet or large plate and refrigerate for 1 hour to firm up.
- Coat cheesecake balls with cake crumbs: After chilling, roll each cream cheese ball in the red velvet cake crumbs, ensuring every side is fully coated for a complete outer layer. Use your hands to reshape and smooth the bites if needed to maintain a round shape.
- Serve or store: Enjoy the cheesecake bites immediately or refrigerate until ready to serve.

Notes
- If the cake crumbs are too moist, drying them briefly in the oven helps prevent the cheesecake bites from becoming soggy.
- You can prepare these bites a day ahead and refrigerate to allow flavors to meld.
- Use full-fat cream cheese and butter for the best creamy texture and flavor.
- Ensure to chill the cheesecake balls well before coating them in cake crumbs to help them hold their shape.
- Optionally, you can dust the finished bites with additional powdered sugar or garnish with mini chocolate chips for extra flavor.
