Roasted Garlic
- 3 heads garlic
- 1 teaspoon olive oil
- Salt and pepper to taste
Dip Ingredients
- 1 8 oz cream cheese, softened
- 1.5 cups mozzarella cheese, hand shredded (reserve ½ cup for topping)
- ½ cup parmesan cheese
- ¼ cup fresh parsley, chopped
- ¼ cup mayonnaise
- 1–2 tablespoons garlic powder
- Salt and pepper to taste
Instructions
- Roast the Garlic: Preheat your oven to 375°F (190°C). Cut off the tops of the garlic heads to expose the cloves. Place the garlic heads in the center of a large piece of aluminum foil. Drizzle lightly with olive oil and season with salt and pepper. Loosely wrap the foil around the garlic heads and roast in the oven for 1 hour until soft and caramelized. Remove and let cool.
- Extract Roasted Garlic: After cooling, squeeze the garlic heads gently to push out the soft roasted garlic cloves. Set aside.
- Prepare the Dip Mixture: In a medium bowl, combine the softened cream cheese, 1 cup shredded mozzarella, parmesan cheese, chopped parsley, mayonnaise, garlic powder, salt, pepper, and the squeezed roasted garlic cloves. Stir well until all ingredients are evenly incorporated.
- Assemble the Dip: Transfer the mixture to a baking dish and spread it evenly. Top with the reserved ½ cup shredded mozzarella cheese to create a melty golden crust.
- Bake the Dip: Place the dish in the preheated oven (375°F/190°C) uncovered. Bake for about 20-25 minutes or until the cheese is melted, bubbly, and the edges are hot.
- Garnish and Serve: Once baked, remove the dip from the oven and let it cool for a few minutes. Garnish with additional chopped fresh parsley. Serve warm with chips, crackers, or bread for dipping.
