Instructions

  1. Prepare the Pie Crust – Begin by preparing the pie crust in an 8-inch or 9-inch pie pan. Chill the crust while you prepare the filling.
  2. Heat the Cream Mixture – Combine cream, brown sugar, cornstarch, and salt in a saucepan. Heat until thickened.
  3. Temper the Eggs – Gradually mix hot cream into beaten egg yolks to prevent curdling.
  4. Combine the Mixture – Stir in honey and vanilla after tempering the eggs.
  5. Fill the Pie Crust – Pour custard into the chilled pie crust.
  6. Bake the Pie – Bake at 375°F (190°C) for 40-45 minutes until set.
  7. Cool and Set – Allow the pie to cool at room temperature, then refrigerate until firm.
  8. Finish with Sea Salt – Sprinkle flaky sea salt over the pie before serving.
