Ingredients

  • 4 ounces uncooked angel hair pasta
  • 8 jumbo shrimp, peeled and deveined
  • 6 fresh asparagus spears, trimmed and cut into 2-inch pieces
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup chicken broth
  • 1 small plum tomato, peeled, seeded and diced
  • 1/4 teaspoon salt
  • 1/8 teaspoon crushed red pepper flakes
  • 1 tablespoon each minced fresh basil, oregano, thyme and parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Step 1: Cook the pasta according to the instructions on the package until al dente. Before draining, reserve some pasta cooking water and then drain the pasta.
  2. Step 2: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the shrimp and asparagus and sauté until the shrimp turn pink, about three to four minutes.
  3. Step 3: Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Step 4: Stir in the sliced mushrooms, chicken broth, diced tomato, salt, and crushed red pepper flakes. Let the sauce simmer uncovered for two minutes.
  5. Step 5: Add the drained pasta and fresh herbs to the skillet. Toss everything together to combine and coat the pasta with the sauce. If the pasta seems dry, add a splash of the reserved pasta water to loosen it and help thicken the sauce.
  6. Step 6: Sprinkle the pasta with grated Parmesan cheese before serving. Toss gently once more and enjoy.

Tips & Variations

  • Reserve pasta water to adjust sauce consistency—it adds flavor and helps the sauce cling to the pasta.
  • Swap asparagus with green beans or snap peas for a different crunch.
  • Add a squeeze of fresh lemon juice before serving for a bright finish.
  • Use fresh herbs for the best flavor or substitute with 1 teaspoon dried herbs if needed.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat, adding a splash of water or broth to loosen the sauce if it thickens too much.

How to Serve

Two plates of shrimp pasta are shown on a white marbled textured surface. Each white plate holds a layer of light yellow spaghetti noodles topped with large, pink cooked shrimp, green asparagus pieces, and small red bell pepper pieces. There are light brown bits of mushrooms mixed throughout and a sprinkle of light tan grated cheese on top. One plate is fully visible on the right side of the image, with a silver fork placed on the right edge of the plate. The other plate is partially visible on the left, placed on a folded white patterned napkin with the fork resting beside it. A glass of pale yellow liquid is visible just above the right plate.
