Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the angel hair pasta according to package instructions until al dente. Reserve some pasta cooking water before draining.
  2. Prepare the sauce: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add shrimp and asparagus pieces and sauté until shrimp turn pink, about 3 to 4 minutes. Stir in minced garlic and cook for an additional minute.
  3. Add vegetables and simmer: Add sliced mushrooms, chicken broth, diced tomato, salt, and crushed red pepper flakes to the skillet. Stir to combine and simmer the sauce uncovered for 2 minutes to meld flavors and slightly reduce the liquid.
  4. Combine pasta and sauce: Drain the pasta and add it to the skillet with the shrimp and vegetable sauce. Toss well to coat the pasta evenly. Add fresh herbs (basil, oregano, thyme, parsley) and continue tossing to incorporate their aroma and flavor.
  5. Finish and serve: Sprinkle grated Parmesan cheese over the pasta and toss gently. If the pasta appears dry or lacks sufficient sauce, add a splash of reserved pasta water to adjust the consistency. Serve immediately while warm.
