Pasta:
- 4 cups uncooked pasta
Cheese Sauce:
- 6 Tablespoons butter
- 6 Tablespoons flour
- 1 1/2 cups milk
- 1/2 cup heavy whipping cream
- 4 cups shredded cheese (blend of two cheeses)
- 2 teaspoons salt
- 1 teaspoon white pepper
- 1 teaspoon paprika
Instructions
- Preheat oven to 325ºF.
Grease a 9” x 13” casserole dish. Set aside.
- Melt butter in a large stockpot over medium heat.
In a separate pot, cook macaroni just under preferred doneness.
- Whisk in flour to form a roux; add seasonings.
Whisk in milk and cream over medium-high heat.
- Whisk in 3 cups of cheese until melted.
- Drain pasta; do not rinse.
- Pour cheese sauce over cooked macaroni.
- Transfer to casserole dish; top with remaining cheese.
- Bake for 25 minutes until browned.
- Allow to sit for 5-10 minutes before serving.
