- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
Additional Ingredients:
- 1 cup shredded zucchini
- 1/2 cup shredded carrot
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- Zest of one orange
Instructions
- Preheat oven: Preheat oven to 350°F (175°C) and prepare a 9 x 5-inch loaf pan or muffin tin.
- Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet ingredients: In another bowl, beat eggs, sugar, oil, and vanilla. Mix wet ingredients with dry until just combined.
- Add mix-ins: Fold in zucchini, carrots, walnuts, cranberries, and orange zest until evenly distributed.
- Bake: Pour batter into pan or muffin cups and bake for 50-60 minutes for a loaf, or 18-22 minutes for muffins, or until a toothpick inserted comes out clean.
- Cool and serve: Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
Notes
- You can customize this bread by adding chocolate chips, raisins, or your favorite nuts.
- For a healthier version, you can reduce the sugar or use a sugar substitute.
