  • 1 cup shredded zucchini
  • 1/2 cup shredded carrot
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries
  • Zest of one orange

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and prepare a 9 x 5-inch loaf pan or muffin tin.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Combine wet ingredients: In another bowl, beat eggs, sugar, oil, and vanilla. Mix wet ingredients with dry until just combined.
  4. Add mix-ins: Fold in zucchini, carrots, walnuts, cranberries, and orange zest until evenly distributed.
  5. Bake: Pour batter into pan or muffin cups and bake for 50-60 minutes for a loaf, or 18-22 minutes for muffins, or until a toothpick inserted comes out clean.
  6. Cool and serve: Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
