For the Caesar Dressing:

  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch of sea salt

For the Chicken Cutlets:

  • 5 chicken cutlets
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • Oil (for frying)
  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)

For Assembly:

  • 2 romaine hearts (chopped)
  • 12 French baguettes

Parmesan cheese (for topping)


Instructions

  1. Prepare the Caesar Dressing: In a medium-sized bowl, whisk together all of the dressing ingredients: mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and salt. Mix until the dressing is smooth, then set it aside.
  2. Bread and Fry the Chicken: Pat the chicken cutlets dry and season both sides with salt and pepper. Set up a breading station with three separate bowls. In the first bowl, combine the flour, salt, and smoked paprika. In the second bowl, whisk the two eggs with ¼ tsp of salt. In the third bowl, combine the panko, breadcrumbs, parsley, black pepper, sea salt, dried oregano, garlic powder, and Parmesan cheese. Dip each chicken cutlet first in the flour mixture, then in the egg wash, and finally coat it completely in the breadcrumb mixture. Heat a layer of oil in a large pan over medium-high heat. Carefully place the breaded chicken cutlets in the hot oil without overcrowding the pan. Fry for 3-4 minutes per side, or until they are golden brown and cooked through. Once done, remove them from the pan and let them drain on a wire rack.
  3. Assemble the Sandwich: Slice the French baguettes in half lengthwise. Spread a generous amount of the prepared Caesar dressing on both sides of the baguette. Place the crispy chicken cutlets on the bottom half. In a separate bowl, toss the chopped romaine lettuce with more of the Caesar dressing. Pile the dressed lettuce on top of the chicken and finish with a sprinkle of freshly grated Parmesan cheese

Notes

  • If you have time, you can marinate the chicken cutlets in a small amount of the Caesar dressing before breading them for an even richer flavor.
  • You can adjust the seasoning in the breading to your liking. Add a pinch of cayenne pepper for a little heat.
