Instructions
- Heat the oil and sauté onions: Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the finely chopped onions and cook until softened and translucent, about 5 minutes.
- Add garlic and ginger: Stir in the minced garlic and ginger, sautéing for 1-2 minutes until fragrant and well combined with the onions.
- Cook the ground beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until the beef is browned all over, about 7 minutes, ensuring it is thoroughly cooked.
- Add tomatoes and spices: Stir in the chopped tomatoes along with the ground cumin, ground coriander, turmeric, chili powder, and garam masala. Cook the mixture for 5 minutes, allowing the tomatoes to soften and the spices to release their aroma.
- Add potatoes, salt, and water, then simmer: Add the peeled and cubed potatoes to the skillet, season with salt to taste, and pour in 1/2 cup of water. Stir well to combine all ingredients. Cover the skillet and reduce the heat to low. Cook for about 20 minutes, or until the potatoes are tender and the sauce has thickened, stirring occasionally to prevent sticking.
- Garnish and serve: Remove from heat and garnish the curry with fresh cilantro. Serve hot with steamed rice or warm naan bread for a complete meal.
