- ½ teaspoon chili powder
- 1 pound lean ground beef
- 1½ teaspoons salt
- 2 teaspoons garlic powder
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon black pepper
- 1 cup cottage cheese
- 2 avocados, sliced
- ¼ cup hot honey
- Chili flakes
- Sliced green onions
Instructions
- Roast the Sweet Potatoes – Preheat oven to 400°F (200°C). In a bowl, toss sweet potato cubes with olive oil and seasonings. Spread on a baking sheet and roast for 20 minutes, or until tender and slightly crispy.
- Cook the Ground Beef – In a skillet over medium heat, cook ground beef until browned. Drain excess fat if necessary. Add all spices to the beef, stirring well to combine. Cook for an additional 2-3 minutes to let flavors meld.
- Assemble the Bowls – In meal prep containers or bowls, divide roasted sweet potatoes and seasoned ground beef. Top each with a scoop of cottage cheese, sliced avocado, a drizzle of hot honey, chili flakes, and green onions.
