Description

These Spicy Korean Beef Noodles are a deliciously fiery and flavorful dish that combines tender flank steak with a spicy gochujang sauce, savory mushrooms, and comforting ramen noodles. Perfect for a quick and satisfying weeknight meal!

Ingredients

Scale

For the Marinade:

  • 2 tablespoons gochujang
  • 2 tablespoons thinly sliced green onions
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon sesame oil
  • 4 teaspoons sugar

For the Noodles:

  • 1 pound flank steak
  • 2 tablespoons oil
  • 2 packages beef ramen (including seasoning)
  • 1 ½ cups water
  • ½ white onion, thinly sliced
  • ½ cup sliced mushrooms

Instructions

  1. Marinate the Steak: In a small bowl, whisk together gochujang, green onions, soy sauce, rice vinegar, garlic, ginger, sesame oil, and sugar. Pour half of the mixture into a large ziplock bag. Add the steak, seal the bag, and chill for at least 30 minutes.
  2. Cook the Steak: Heat oil in a large pan over medium-high heat. Transfer the steak from the bag to the pan (reserve the marinade) and cook for 5-8 minutes on each side. Remove the steak from the pan and let it rest.
  3. Prepare the Noodles: Add onions, mushrooms, ramen noodles, ramen seasoning, and the reserved beef marinade to the pan. Pour water over the top and simmer for 5-7 minutes until the noodles are tender.
  4. Assemble and Serve: Slice the steak thinly across the grain. Add the steak strips and reserved sauce to the pan, stirring to combine. Cook for a few minutes until the steak is heated through. Garnish with green onions and serve hot.
