Instructions
- Prepare Muffin Pan: Spray 9 cups of a muffin pan thoroughly with cooking spray to prevent sticking during baking.
- Make Cream Cheese Mixture: Microwave the softened cream cheese in 10-second intervals until soft and melted but not steaming. Add the egg, olive oil, and dried dill to the cream cheese and mix well until fully combined.
- Combine Filling Ingredients: In a separate bowl, combine chopped spinach, crumbled feta, and bacon bits. Pour the cream cheese mixture over this and season with salt and pepper. Use a fork to mix everything evenly.
- Prepare Puff Pastry Cups: Cut the thawed puff pastry sheet into 9 equal squares. Gently stretch each square and press it into each muffin cup, lining the bottom and sides.
- Fill Pastry Cups: Divide the spinach and cheese filling evenly among the lined muffin cups. Bring the four corners of each pastry square together over the filling, pressing to seal.
- Apply Butter and Bake: Brush the tops of each puff with melted butter. Bake in a preheated oven at 400°F (204°C) for about 20 minutes, or until golden brown and puffed.
