Instructions
- Prep: Wash, de-stem, and slice the fresh strawberries in half or quarters. Set aside half of the sliced berries in a mixing bowl for later.
- Blend: Place the remaining half of the strawberries into a blender or food processor. Blend thoroughly until you achieve a smooth purée with no large lumps.
- Heat: In a saucepan, combine the strawberry purée, cornstarch, lemon juice, and sugar. Stir well to mix the ingredients uniformly. Heat the mixture over medium-high heat until it reaches a gentle boil, then reduce the heat to low-medium and simmer until the glaze thickens. This process usually takes a few minutes. To check readiness, dip a spoon into the glaze; if the back of the spoon remains coated with the glaze, it is done.
- Stir: Remove the saucepan from the heat source and stir in the vanilla extract until it is thoroughly incorporated into the glaze.
- Pour and Mix: Strain the warm strawberry glaze through a fine mesh strainer into the bowl with the reserved fresh strawberries. Stir gently to coat the fresh berries evenly with the glaze. Allow the mixture to cool to room temperature or refrigerate before using as a topping for cakes, cheesecakes, or other desserts.
