Fresh Pineapple:
- 1 fresh pineapple (peeled)
Strawberries:
- 1 pound strawberries
Roma Tomatoes:
- 2 Roma tomatoes (diced)
Red Onion:
- 1/2 medium red onion (minced)
Jalapeno:
- 1/2 medium jalapeno (minced)
Cilantro:
- 1/3 cup chopped fresh cilantro
Lime Juice:
- 1 lime (juiced)
Salt:
- 1/2 teaspoon salt
Instructions
- Prepare Pineapple: Remove the peel and core from the pineapple and dice the fruit into a small, 1/4-inch dice. Place into a large mixing bowl.
- Prep Strawberries: Hull the strawberries, and dice into a small, 1/4-inch dice. Add to bowl with pineapple.
- Dice Tomatoes: Dice the tomatoes into a 1/4 inch dice as well and toss with pineapple and strawberries.
- Combine Ingredients: Add minced onion and jalapeno to bowl along with cilantro, lime juice, and salt. Stir to combine.
- Rest Before Serving: Allow to sit at room temperature for 30 minutes before serving. Keeps in the refrigerator for up to 24 hours.
