For the Chicken Rolls

  • 2 large chicken escalopes, thin
  • 200 g fresh Paris mushrooms, sliced
  • 100 g melting cheese (Emmental, Comté, mozzarella, or cheddar), grated or sliced
  • 1 clove garlic, chopped
  • 1 tablespoon butter
  • Fine salt, to taste
  • Ground black pepper, to taste
  • Olive oil, for cooking
  • Fresh parsley, chopped, for garnish

Instructions

  1. Sauté Mushrooms: In a skillet over medium heat, melt the butter. Stir in the chopped garlic and cook for about 1 minute until fragrant. Add the sliced mushrooms and sauté until all their moisture has evaporated, seasoning with salt and black pepper. Remove from heat and set aside.
  2. Prepare Chicken: If necessary, gently pound the chicken escalopes to an even thickness for rolling. Spoon the mushroom mixture into the center of each escalope, then layer the cheese on top.
  3. Roll and Secure: Roll each chicken escalope tightly around the filling. Secure each roll with toothpicks or kitchen twine to maintain shape during cooking.
  4. Brown and Cook: Heat a drizzle of olive oil in a pan over medium heat. Brown the chicken rolls evenly on all sides until golden brown. Then cover the pan, reduce heat to low, and cook the rolls for 10 to 12 minutes until the chicken is cooked through and tender.
  5. Serve: Serve the stuffed chicken rolls hot, drizzled with the pan juices. Add a few sautéed mushroom slices on top and finish with a sprinkle of fresh parsley for garnish.
