Instructions
- Prepare the Chicken: If not using pre-cooked chicken, cook chicken breasts by boiling, baking, or grilling until fully cooked. Let them cool completely before shredding or dicing into bite-sized pieces.
- Toss Chicken with Sweet Chili Sauce: In a medium bowl, combine the cooked chicken with the sweet chili sauce. Mix thoroughly so every piece is evenly coated with the spicy-sweet glaze.
- Prepare the Veggies: Wash and shred the lettuce or greens. Thinly slice the cucumber and red onion, and shred the carrots. Slice the avocado just before assembly to avoid browning.
- Assemble the Wraps: Lay each tortilla flat and spread a thin layer of mayonnaise or Greek yogurt in the center if using. Layer with shredded lettuce, sweet chili chicken, shredded carrots, cucumber slices, red onion, avocado slices if desired, shredded cheese, and fresh cilantro. Squeeze fresh lime juice on top and season with salt and pepper.
- Roll and Serve: Fold the sides of the tortilla inward and roll tightly from bottom to top, ensuring all fillings stay inside. Slice in half if desired. Serve immediately or wrap in foil/plastic wrap for later consumption.
