Sweet Potatoes

- 2 tablespoons crumbled feta cheese
- Za’atar, for sprinkling
- Urfa Biber or Aleppo pepper, for sprinkling
- 1 tablespoon chopped fresh parsley
Instructions
- Prepare sweet potatoes: Slice each roasted sweet potato in half lengthwise using a small sharp knife, setting them cut side down for searing.
- Sear sweet potatoes: Heat 1 tablespoon of olive oil in a medium nonstick skillet over medium heat until shimmering. Add the sweet potato halves cut side down, cooking for about 3 minutes until heated through and slightly crisped.
- Finish sweet potatoes: Transfer the sweet potatoes to serving plates, cut side up. Using a knife, carefully cut a pocket down the middle of each sweet potato half without piercing the skin. Season with a pinch of kosher salt and black pepper to enhance flavor.
- Fry eggs: In the same skillet, add more olive oil as needed and heat until shimmering. Crack the eggs into the pan and cook for about 3 minutes until the whites are set and the edges turn golden. Season lightly with salt and pepper.
- Assemble and serve: Place a fried egg inside each sweet potato pocket. Sprinkle each with crumbled feta cheese, za’atar, Urfa biber or Aleppo pepper, and chopped fresh parsley. Serve immediately while warm for the best taste.
