Instructions
- Preheat and Cream: Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg yolk and mix thoroughly to combine.
- Form the Dough: Gradually stir in the all-purpose flour by hand, incorporating it evenly. Turn the dough out onto a lightly floured surface and knead gently for 2-3 minutes until smooth and fully combined.
- Shape the Cookies: Roll the dough into 1-inch diameter balls. Place them about 2 inches apart on greased baking sheets to allow space for spreading during baking.
- Fill Indentations: Using the end of a wooden spoon handle, press an indentation into the center of each dough ball. Carefully fill each indentation with approximately 1/4 teaspoon of raspberry or strawberry preserves.
- Bake: Bake the cookies in the preheated oven for 13-15 minutes, or until the edges just start to turn a light golden brown.
- Cool and Dust: Remove the cookies from the oven and transfer them to wire racks to cool. While still warm, dust with confectioners’ sugar if desired for a delicate, sweet finish.
