Marinade:

  • 1/2 cup Olive oil
  • 1/2 cup Fresh lime juice (about 46 limes)
  • 1/4 cup Fresh orange juice (about 1 large orange)
  • 1/4 cup Soy sauce
  • 6 Garlic cloves
  • 1 cup Fresh cilantro
  • 1/2 medium White onion
  • 1 Jalapeño pepper
  • 1 tablespoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Mexican oregano
  • 1 teaspoon Black pepper
  • 1/2 teaspoon Sea salt

Instructions

  1. Combine all ingredients: Add all marinade ingredients to a blender or food processor.
  2. Combine olive oil, lime juice, orange juice, soy sauce, garlic, cilantro, onion, jalapeño, smoked paprika, cumin, oregano, black pepper, and salt.

  3. Blend until smooth: Process until a smooth marinade forms.
  4. Marinate the meat: Pour the marinade over skirt or flank steak in a bowl or bag.
  5. Let it marinate: Refrigerate for at least 2 hours or overnight.
  6. Grill: Remove meat from the fridge, discard marinade, and grill to perfection.

  • For extra flavor, reserve some marinade before adding it to the meat to use as a sauce after grilling.
