Frosting:

  • 8 oz tub cool whip, thawed
  • 1 (3.4 oz) box pistachio pudding mix
  • ⅔ cup whole milk
  • Additional 1 (3.4 oz) box pistachio pudding mix (for frosting)
  • Pistachios, chopped for decoration

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix Ingredients: In a large mixing bowl, combine angel food cake mix, pistachio pudding mix, eggs, vegetable oil, and crushed pineapple. Beat until smooth.
  3. Bake: Pour batter into baking dish and bake for 30–35 minutes until a toothpick comes out clean.
  4. Cool: Let the cake cool completely.
  5. Make Frosting: Mix second pistachio pudding mix with milk until thickened. Fold in cool whip.
