Cake:
- 3 eggs
- 1 box angel food cake mix
- ½ cup vegetable oil
- 20 oz can crushed pineapple with juices
Frosting:
- 8 oz tub cool whip, thawed
- 1 (3.4 oz) box pistachio pudding mix
- ⅔ cup whole milk
- Additional 1 (3.4 oz) box pistachio pudding mix (for frosting)
- Pistachios, chopped for decoration
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Mix Ingredients: In a large mixing bowl, combine angel food cake mix, pistachio pudding mix, eggs, vegetable oil, and crushed pineapple. Beat until smooth.
- Bake: Pour batter into baking dish and bake for 30–35 minutes until a toothpick comes out clean.
- Cool: Let the cake cool completely.
- Make Frosting: Mix second pistachio pudding mix with milk until thickened. Fold in cool whip.
- Frost Cake: Spread frosting over cooled cake.
- Chill: Refrigerate for at least 2 hours.
- Serve: Before serving, top with chopped pistachios.
