Cauliflower Mash Ingredients

  • 1 head of cauliflower, cut into 1/2-inch pieces
  • 1 cup vegetable broth
  • 1 cup water

  • 2 tablespoons vegan butter, cut into chunks
  • 1 teaspoon chopped fresh thyme
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare and Steam Cauliflower: In a large pot, combine the vegetable broth, water, and 1 teaspoon salt. Bring this mixture to a boil. Add the cut cauliflower pieces to the pot and bring it back to a boil. Once boiling, cover the pot and reduce the heat to low. Let the cauliflower steam for about 20 minutes or until it becomes very tender.
  2. Puree the Cauliflower: Using a slotted spoon, transfer the cooked cauliflower into a food processor. Add 3 tablespoons of the vegetable broth and water mixture from the pot along with the vegan butter chunks. Process the mixture until it becomes smooth and creamy.
  3. Season and Finish: Taste the mashed cauliflower and adjust the seasoning with additional salt and freshly ground black pepper as needed. Add the chopped fresh thyme and pulse the food processor just until the thyme is evenly combined. Serve warm.
