- 2 cups split peas
- 6 cups vegetable broth
- Salt and pepper, to taste
Instructions
- Heat the oil: In a large pot with a lid, heat 1 tablespoon of vegetable or olive oil over medium heat until shimmering.
- Sauté vegetables: Add the diced onion, minced garlic, diced carrot, and sliced celery to the pot. Cook while stirring occasionally for 5 to 7 minutes until the vegetables are softened and fragrant.
- Add split peas and broth: Stir in 2 cups of split peas and pour in 6 cups of vegetable broth. Cover the pot with the lid, reduce heat to low to maintain a simmer.
- Simmer the soup: Let the soup cook gently for 45 minutes covered, then remove the lid and continue cooking uncovered for an additional 15 minutes to thicken the soup and blend the flavors.
- Season and serve: Taste the soup and season with salt and freshly ground pepper as desired. Serve hot and enjoy this comforting vegan dish.
