Ingredients

Scale

Vegetables and Aromatics

  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 large carrot, diced
  • 2 ribs of celery, sliced

Soup Base

  • 1 Tablespoon vegetable or olive oil
  • 2 cups split peas
  • 6 cups vegetable broth
  • Salt and pepper, to taste

Instructions

  1. Heat the oil: In a large pot with a lid, heat 1 tablespoon of vegetable or olive oil over medium heat until shimmering.
  2. Sauté vegetables: Add the diced onion, minced garlic, diced carrot, and sliced celery to the pot. Cook while stirring occasionally for 5 to 7 minutes until the vegetables are softened and fragrant.
  3. Add split peas and broth: Stir in 2 cups of split peas and pour in 6 cups of vegetable broth. Cover the pot with the lid, reduce heat to low to maintain a simmer.
  4. Simmer the soup: Let the soup cook gently for 45 minutes covered, then remove the lid and continue cooking uncovered for an additional 15 minutes to thicken the soup and blend the flavors.
  5. Season and serve: Taste the soup and season with salt and freshly ground pepper as desired. Serve hot and enjoy this comforting vegan dish.

Notes

  • For a smoother texture, blend part or all of the soup with an immersion blender.
  • You can add herbs like thyme or bay leaves during cooking for additional flavor.
  • If the soup becomes too thick, add a little more vegetable broth or water to adjust consistency.
  • This soup stores well in the refrigerator for up to 4 days and freezes beautifully for up to 3 months.
  • To add a smoky depth, consider a dash of smoked paprika or liquid smoke.
