Cake:
- 3 eggs
- 3/4 cup buttermilk

Instructions
- Preheat Oven: Preheat oven to 350 degrees. Grease and flour two or three 8-inch pans.
- Mix Wet Ingredients: In a mixing bowl, combine eggs, buttermilk, oil, sugar, and vanilla. Mix well.
- Add Dry Ingredients: Mix in flour, baking soda, salt, and cinnamon until well blended.
- Incorporate Remaining Ingredients: Add carrots, coconut, pineapple, and walnuts. Mix until just combined.
- Bake: Pour batter into prepared pans and bake at 350 degrees for 35 minutes. Check for doneness.
- Cool and Frost: Allow cakes to cool in pans, then invert onto a plate and frost each layer.
- Prepare Frosting: For the cream cheese frosting, beat butter and cream cheese until fluffy. Add vanilla and powdered sugar, beating until smooth. Adjust consistency if needed.
